Here is a quick Wednesday funny (that is, actually, on Wednesday!).
But first, a confession.
I am not a great cook. I don’t whip up lots of fantastic recipes that guests swoon over. I do not enjoy spending lots of time chopping, slicing, dicing, basting, simmering, reducing, etc. etc. etc.
When it comes to cooking, my plan of attack is to make something nutritious, which is also fast, easy and kid-appealing.
I was raised by a single Dad, and with raising three kids, taking care of our home and running his own business, something had to give. Cooking was it. We had home-cooked meals on holidays and special occasions…sometimes even on a weekend. So, I didn’t have the experience of hanging out in a kitchen with a parent and learning how to cook as a child, and I have learned how to cook as I go.
Now with our large family, I would rather spend a short time preparing dinner and having lots more time to do other things with the kids, than spend lots of time in the kitchen.
Josh loves to cook. He creates divine salmon burgers, to die for Dutch-over potatoes, perfect omelets, and countless other dishes worthy of a top-notch restaurant. He loves to cook and he is oh-so good at it. I am a lucky gal!
Anyway, my kids are easy to please. Spaghetti, garlic bread and veggies= a tasty feast. Tacos, tortilla chips, salsa and corn=perfect dinner. Barbequed chicken, salad and noodles=yummmm. Pancakes and fruit=perfectly acceptable dinner.
So, keeping in mind my lack of cooking expertise and the lack of skill required in the meals I prepare, you will completely understand how floored I was when a lady from church asked me for my “wonderful biscuit recipe.”
My what? Huh?
No one had asked me for a recipe in a really, long time…like “ever”. (That is because I only have two worth asking for…one for Irish Soda bread, which is something I do make VERY well, and one for peanut butter cookies).
I tried not to look too confused, and asked her to clarify.
Well, they had been talking about favorite foods in Sunday school and my kids started going on and on about the wonderful home made biscuits that their mom makes all the time and how they are their favorite food. They even went on to tell their class what a wonderful cook I was.
I’ve told my kids a few times that just because I cook something at home, doesn’t mean it is home made so to speak, but apparently I need to tell them that again.
So, I was forced to admit that my “wonderful home made biscuit recipe” was actually biscuits in a can…twist, pop and bake. I don’t even buy the name brand one…they are “Western Family.”
Sigh…at least my kids are easy to please! (Hopefully they won’t tell people about my secret home made lasagna recipe…Stauffer’s Party Size…I get two a month when they are on sale to keep in the freezer for extra busy nights!!!!!)
